1 Easy Filling  = 3 Tasty Snacks

This is a very versatile potato filling. I make a big batch of this to make my work week meals easy. Let me show you how to make cutlets, wrap and a sandwich using this filling.

Versatile Potato Filling

Recipe for the filling

  • Potatoes ….. 10 medium size
  • Green peas ( fresh or frozen )……. 1/2 cup
  • Corn ( fresh or frozen )…… 1/2 cup
  • Carrots ………..2 ( diced)
  • Garlic ……… 1 ( grated)
  • Cilantro ( coriander leaves ) …… 2 tablespoons (chopped )
  • Chili powder ( spicy) …… 1 teaspoon 
  • {Or paprika }
  • Garam masala powder ….. 1 teaspoon ( optional)
  • Salt … 1 teaspoon
  • Oil and butter for sautéing 

Peel the potatoes , dice and cook them with peas and corn together in a pressure pan( or steam cook it ). Mash it with the fork and keep it aside.

Heat the pan add a tablespoon of oil and some butter. Add the diced carrots and sauté them until it’s cooked ( should have a little crunch).

Now add the chili powder, garam masala , grated garlic , cilantro and the salt quickly sauté them for a minute then add the potato filling and mix it well.Keep it in a low flame and let it cook for a couple of minutes.When you smell the aroma of the garam masala it’s ready. 

Now let me show you how to make a quick tasty breakfast sandwich out of this.

Breakfast Sandwich 

Butter the bread slices on both sides.

Heat up the griddle and toast the bread. (This actually helps seal the bread so when you put the filling it doesn’t become soggy). 

Turn it and put the potato filling on the toasted side. 

Once the other side is toasted put them together and slightly press it with the spatula. This makes that beautiful grill marks on the sandwich.

Serve them hot with your favorite sauces or ketchup. 

Now I’m going to show you how to make a tasty lunch wrap using the same filling.

Lunch wrap 

  • Chapathi/ roti {Indian flat bread}……… 2 or 3 
  • ( you can use flour tortilla or pre made wraps) 
  • Potato filling …. 2 or 3 tablespoons 
  • Chaat masala …. 1 teaspoon 

How to make chaat masala

  • Roasted cumin and coriander powder… 1 teaspoon 
  • Mix of cinnamon and clove powder … 1/4 teaspoon 
  • Fine black pepper powder…. 1/4 teaspoon 
  • Paprika … 1/4 teaspoon 

Mix everything together that’s it you have home made chaat masala.

Green chutney   

  • 1 cup of chopped coriander leaves
  • 1 or  2 green chili 
  • 1/2 teaspoon of chat masala
  •  1/2 teaspoon of salt
  • Tiny piece of ginger
  • 1/4 teaspoon of lemon juice. 

Put everything in a blender and grind it into a thick smooth paste with little bit of water .

If you can handle the heat use chili garlic chutney instead of coriander chutney. This tastes even better . 

You can buy these chutney and chaat masala in any Indian grocery store . I always have these ready made ones in my fridge, it comes in very handy when you are in a rush .


  • 1  Sliced onion , 
  • 1/2 sliced green bell pepper, 
  • 1/4 cup sliced cabbage or lettuce and some chopped coriander leaves .. 
  • 1/2 teaspoon of chat masala

Mix everything together with a bit of salt. Let it sit for sometime for the flavors to meld . The salt will slightly cook the salad and yet it retains the crunch which is perfect for the wrap . 

Brush the wrap or chapathi with a little bit of softened butter , heat up the pan and slightly warm them up and keep it aside. Butter gives the golden color and makes it very tasty

Now spread a tiny bit of green chutney on the wrap , put the potato mix then the salad on top  and roll it into a tight wrap. And serve it immediately. If you want to take this for lunch to the school or office then take the chutney on the side so that it doesn’t get soggy.


I have showed my wrapping technique above ,this makes a nice pocket and ensures both sides are completely sealed and the filling doesn’t fall off when you bite into it . 

Now let me show you how to make a tasty evening snack out of this mix .

Potato Cutlets

Take a scoop of the potato filling and make it into a round patty

Now prepare the breading station 

  1. Take three bowls fill one with flour ( all purpose or wheat )
  2. In the next bowl make a batter with the flour ,teaspoon of corn starch and water and make into a consistency of pancake batter.
  3. Fill the next bowl with bread crumbs  ( Panko, plain or seasoned bread crumbs ) 
  4. Now dip the patty in the flour and shake the excess, next dip it in the batter and finally coat it nicely with the bread crumbs and set it aside .

This 3 step process makes the bread crumbs stick very well to the cutlets, result you get this extra crunchy coating which is very yummy.

Heat oil in a shallow pan and fry the patties slowly in a medium flame to get the golden color and crunchy texture .

Serve it hot with the choice of your favorite sauces or ketchup and enjoy !!

This make ahead filling makes your life easy during the week days .It’s very easy to prepare and with few ingredients you can make three tasty snacks. Make the left overs into patties and freeze them and its ready to use whenever you  need them.

Freezing them as patties make it easy for you to use just one for a quick snack instead of thawing the whole thing.
