We all love to eat instant noodles, it’s tasty and satisfying but has no nutritional value so I like to spice it up with lots of veggies to make it yummy and healthy.
Noodle Stir Fry
How to cook instant noodles for a stir fry?
I’m not going to cook these noodles according to the instructions on the package instead .. I’m going to show you how a small change in the cooking process can completely change the taste and texture of the instant noodles.
Heat water in a large pan, once it comes to a rolling boil add the noodles. Cooking it in a large pot of water prevents it from getting mushy.
Do not cook it for more than 3 minutes .
Meanwhile get the veggies ready for the stir fry.
- 1 onion – sliced
- 1/2 Red pepper – sliced
- 1 carrots – diced
- 1 small bowl of peas and corn – fresh / frozen
- 1- Finely minced garlic
- 2 – Green chilli slit in half (optional)
- Finley chopped cilantro for garnish. Both stems and leaves.
Add oil and little bit of butter in a broad pan just add all the veggies and sauté it in a medium heat, they should have a little crunch.
Look how colorful it is .
Now add the noodles little at a time and gently mix it with the sautéed veggies…
I don’t even bother to serve it in a bowl, I would just it eat it right out of the pan 🙂

When you are making a stir fry, literally double up on the veggies, it may seem like a lot in the begining but cooks down quite a bit at the end.
I have used Indian wheat noodles (does not have the yellow color) with Masala flavor. It’s available in so many other flavors too. The choice is yours !
You can use your own choice of veggies like broccoli, edamame, baby corn, fresh ginger, soy sauce or all spice to make it your own.
Cilantro stems add a little crunch and an extra depth of flavor, you can add chives, leeks or scallions to garnish.
