After a good vacation, it’s so hard to go back to routine. To make things easy I always keep pre cooked potatoes in my fridge. Let me show you how easy it is to whip up a good sabji (side dish), that can double up as a filling for sandwiches and wraps.
Potato Sabji – Kadai Potatoes
Doesn’t that look delicious? It’s colorful, healthy and really yummy too!
- Potatoes – 3
- Peas – 1/2 cup
- Green / red bell peppers – 1 each
- Onion – 1
- Tomato – 1
- Carrot- 1
- Green chili – 2
- Garlic cloves – 2
- Red chili powder – 1 teaspoon
- Coriander powder- 1 teaspoon
- Garam masala – 1/2 teaspoon
- Oil / butter – 1 tablespoon
- Salt – 1 teaspoon
- Cilantro / Coriander leaves – 1 tablespoon
- Dried methi leaves / oregano – 1 teaspoon
- If you don’t have garam masala you can also use curry powder or All spice powder
- Instead of methi leaves you can also use oregano
- Pre cook the potatoes and peas. ( steamed / boiled / pressure cooked)
- Slice the onion, carrot and bell peppers lengthwise
- Take the pulp and seeds out of the tomato and slice them as well.
- Cut the green chilies in half, grate the garlic and finely chop the coriander leaves.
- Heat oil and butter in a broad pan
- Add the sliced onoion, tomato, carrot and bell peppers
- Sauté them for sometime, make sure it still has a crunch.
- Now add the red chili, coriander and garam masala and mix it well
- Continue to sauté until the tomatoes get soft. This creates a light sauce, which keeps the potatoes nice and moist.
- Add the green chili, garlic, salt and coriander leaves, mix it nicely.
- Now add the cooked potatoes and peas,
- Use the spatula and mash some of the potatoes, this acts like a binder and helps keep all the veggies stick together.
- Combine them well , keep it in low flame so that all the flavors meld nicely
- Let’s add the finishing touch, take the methi leaves, slightly crush it in-between your palms and sprinkle it on top. This adds a wonderful aroma to the dish.
- Take it off the heat and let it stay in the pan so that it stays warm until your are ready to eat.
Look how yummy it turned out. It smells and tastes amazing! The mushy potatoes, the crunchy veggies with that light flavorful sauce, yum! it’s absolutely delicious!! Seriously, who could say no to this dish?
I can just eat a bowl of this and call it a day! This Sabji tastes so good with roti/chapati. It can also be eaten with flavored rice dishes like tomato rice, ghee rice, etc…
I use the leftovers to make yummy lunch box sandwiches and wraps. You can also substitute the potatoes with roasted/ steamed cauliflower or deep fried paneer/ tofu. Oh I am telling you, having a box of this sabji certainly makes your hectic work week meals a lot easier!! Enjoy!
